Let’s Make the Bowl!
Ingredients:
- 2 cups cooked jasmine rice
- 1 cup diced cucumbers
- ½ cup shrimp or imitation crab meat
- ½ cup sliced green onions
- 1 avocado (sliced or diced)
- 1 cup chopped lettuce
Sauce Ingredients:
- 3 tablespoons rice vinegar
- 2 tablespoons Bachan Japanese bbq sauce
- 1 tablespoon honey or sugar
- 1 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon lime juice
- Salt and pepper to taste
How to Make the Crispy Rice
- Start with cooked jasmine rice that has cooled slightly.
- Heat a pan over medium heat with a little oil.
- Spread the rice evenly in the pan.
- Let it cook for about 5–7 minutes without stirring so the bottom becomes golden and crispy.
- Flip sections of the rice and cook another 2–3 minutes for extra crunch.
The crispy rice adds that amazing texture that makes this bowl feel like something you’d get from a trendy café.
How I Make My Crispy Rice (Super Fast Mom Hack)
As a busy mom, the air fryer is one of my favorite kitchen shortcuts. It makes this crispy rice bowl come together so fast. Sometimes when I’m short on time, I skip the pan and make my crispy rice in the air fryer instead. It’s honestly the fastest and easiest way, and it still gives the rice that crunchy texture.
Air Fryer Crispy Rice Method (Optional)
- Add your cooked jasmine rice to a bowl.
- Lightly drizzle with a little oil and mix so the rice can crisp up.
- Spread the rice evenly in the air fryer basket or on parchment paper.
- Air fry at 400°F for about 6–8 minutes, shaking halfway through.
You’ll end up with perfect crispy rice pieces that add a really fun crunch to the bowl.
This step is totally optional, but I love doing it this way when I want something quick and simple for lunch. Mom Tip
If you’re meal prepping, keep the crispy rice separate until you’re ready to eat so it stays crunchy. Just reheat it quickly in a pan or air fryer before adding it to the bowl.
How to Make the Dressing
In a small bowl, mix together:
- Rice vinegar
- Soy sauce
- Sesame oil
- Lime juice
- Bachan Japanese BBQ sauce
- honey or sugar
- soy sauce
- Salt and pepper
Whisk until combined. This simple dressing is the key to the flavor. It gives the bowl a slightly tangy, savory taste that pairs perfectly with the crispy rice.
Assemble the Bowl
- Place the crispy rice in a bowl.
- Add diced cucumbers.
- Add shrimp or imitation crab meat.
- Top with sliced avocado.
- Sprinkle green onions on top.
- Drizzle the dressing over everything and gently toss.
Optional Add-Ins
This bowl is easy to customize. Some of my favorite extras include:
- shredded carrots
- sesame seeds
- Edamame
- spicy mayo
- sriracha drizzle
Sometimes I even add extra shrimp and crab when I want a more filling meal.
Final Thoughts
This Crispy Rice Avocado Cucumber Salad Bowl has quickly become one of my favorite quick meals. It’s fresh, crunchy, and the dressing really ties everything together.
If you’re looking for a simple recipe that tastes like takeout but is easy to make at home, this one is definitely worth trying.
And if you make it, let me know how you customize your bowl!

If you love quick rice bowls like this, keeping these ingredients stocked means you can throw together a healthy lunch or dinner in about 10–15 minutes.
